Apple Muffins with Caramel Frosting

Last night, we were invited to a dinner and I made these delicious muffins. These gooey muffins are just right for this season… and of course, the frosting that tastes like caramel makes everything better. The frosting was thick and delicious so pour it all over your muffins!

The topping for these muffins was so delicious, too. It’s not crumbly like you’d imagine but when the muffins are baked, the topping kind of falls on the muffin pan and gets a little hard… and that tastes like toffee and I loved it. So don’t waste the stuff that’s stuck in your pan. It’s yummy stuff! :)

Apple Muffins with Caramel Frosting

  • For Muffins:
  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • 2½ teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 egg
  • 1 cup milk (I used 1%)
  • ¼ cup butter, melted
  • 2 teaspoons vanilla extract
  • ½ cup chopped red apple, peeled
  • For Topping:
  • ½ cup packed brown sugar
  • ¼ cup quick cooking oats
  • 3 tablespoons butter, melted
  • 1 teaspoon ground cinnamon
  • For Frosting:
  • ½ cup packed brown sugar
  • ¼ cup heavy whipping cream or half and half
  • ¼ cup butter, cubed
  • 1 cup confectioners sugar

  1. In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk the egg, milk, butter and vanilla. Stir into dry ingredients just until moistened. Fold in apple.
  2. Fill paper lined muffin cups three fourths full. Combine topping ingredients; sprinkle over batter.
  3. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted in the cake portion comes out clean. Cool for 5 minutes.
  4. Meanwhile, make the frosting combining the brown sugar, cream and butter in a saucepan and bring it to a boil; cook and stir for 2 minutes. Remove from the heat. Beat in confectioners sugar with a hand mixer until creamy and smooth. Drizzle the frosting over muffins.
