Who else has been growing some zucchini in their garden this year? I planted two zucchini plants in our small garden in the Spring and have been harvesting huge zucchinis like crazy! When I realized that I had way too many zucchinis on my veggie plate by the sink, I knew I had to come up with something to use them, or they were going to go bad.

My husband shouted “Zucchini Bread”! I actually really liked the idea because I’m a big fan of zucchini bread. I looked for a good zucchini bread recipe and came across a great looking chocolate zucchini bread recipe. I thought… Chocolate Zucchini Bread? That sounds really good! I had tried chocolate banana bread before so I thought adding a chocolate flavor to the zucchini bread will be really good!

The bread was chocolate-y and moist, too! I made one big loaf and two other little ones. I met up with my college roomie yesterday in Tahoe while she was visiting her in-laws in Nevada for a few days! She lives in Mississippi so I rarely get to see her so it was really nice to see her and her family. I can’t believe how fast time goes by! I feel like we were roommates just yesterday but it’s been over 7 years and we are both married with the cutest boys. I wanted to bake something for her and her family and so I gave her the big loaf I made.

My four year old went crazy over this bread, too. We kept two little loaves for ourselves and my goodness, I am pretty sure he ate one of the two loaves I made.

To make the bread, prepare about 2 cups full grated zucchini.

You will probably need about 2 medium sized zucchinis. I got my 2 cups from my HUGE zucchini from my garden. Actually I only used about 3/4th of the zucchini. HUGE!

Combine all the dry ingredients.

Mix all wet ingredients together in a separate bowl.

Combine the dry and wet ingredients together.

Stir well to mix.

Stir in the zucchini.

Stir in the chocolate chips.

Pour the batter into two large bread pans or 1 large bread pan and 2 small bread pans.

Bake @ 350 degrees F for 55-65 minutes or until the center comes out clean when inserted with a toothpick.
- 2¾ cups flour
- ⅓ cup baking cocoa
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- 3 eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 2 cups grated zucchini
- 1 cup semisweet chocolate chips
- In a large bowl, combine the flour, baking cocoa, sugar, salt, baking soda and baking powder. IN a small bowl, whisk the eggs, oil, vanilla, and cinnamon. Stir into dry ingredients just until moistened. Stir in zucchini and chocolate chips.
- Transfer to two greased 8-in x 4-in x2-in. loaf pans. Bake at 350 degrees F for 55-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

I`ve heard many good things about zucchini bread, but I have yet to try! This looks superrr good though, so it`s very tempting!
How fun to hang out with your roommate! This bread is sure the best use of all that zucchini!
I made this with half whole wheat flour and even skipped the chocolate chips. It was awesome and made the pin board.
