I love the idea of making sweets in a microwave in just a few minutes. I’d made some microwave cakes before and they were so amazing! I should make some again soon so I can share the recipes with you all. When I saw THIS RECIPE on Stumbleupon, I immediately bookmarked it to make it in my own kitchen.
Zoom Yummy has great recipes and knitting/crocheting patterns that I love – and I was so glad to find this wonderful recipe that is so simple and easy to make. I made a slight change to the recipe; I used salted butter instead of unsalted and omitted salt in the recipe. It works fine that way, too.
The finished cookie actually tastes like a cookie, and have a crunchy texture like a cookie (Not exactly like a cookie. Some people have told me that they find it more cakey than cookie-like – although mine always turned out more like a cookie than a cake). Make sure you don’t melt the butter. You’re only supposed to “soften” the butter. Mine always turns out a little bit crunchy and chewy as well, never moist like a cake. I served it with a little bit of ice cream and topped it with some chocolate syrup.
In a shallow, microwavable bowl, place 1 1/2 tablespoons sugar, 1 1/2 tablespoons brown sugar, and 2 tablespoons salted butter (softened at room temperature).
Fluff them together using fork, until fluffy and well mixed.
Beat one egg well and add 2 tablespoons beaten egg to the butter mixture.
Mix together using fork or whisk. Add 1/4 teaspoon vanilla extract.
Add 5 tablespoons all purpose flour to the mixture. Add 1/4 teaspoon baking soda.
Mix well with spoon or whisk, until smooth.
Stir in 1/4 cup chocolate chips (semisweet is what I used) and roughly flatten the dough in the bowl.
Microwave the dough for 2 minutes on high. And ta-da! It’s all ready!! Top it with your favorite ice cream and drizzle with chocolate syrup, if desired.
This is a great recipe to keep for times you crave something sweet but not really willing to make a whole batch of cookies because you’re worried you’re going to eat the whole batch in one seating. This way, your craving will be satisfied but you don’t have to feel so guilty either.
